Since the last reconstruction of the meat plant in 1989 till the present time JSC "Carmez" have spent more than 10 million lei on environment protection. The Joint-stock company "Carmez" has almost completely solved the ecological problem. Even earlier in 1986 5,5 million of convertible rubles were invested in construction and operation of the Czech factory of technical wastes processing, with gases cleaning installations of the ventilating systems, containing such components which are harmful for the human emotional mood, reduce his work capacity. There were also constructed new epuration installations of industrial and storm drains, allowing to reduce the volume of undesirable substances in challenged drains; to supply cleared technical water for the technical purposes of the plant and to reduce the consumption of clean drink water from the urban collector.

To reduce the harmful influence of the gas water house there was scheduled the construction of a new boiler installation where step-burning fuel is designed, that will considerably reduce the emission of undesirable components into the atmosphere. To reduce the emission of harmful substances along with smoke gases of the boiler installation there was designed a special installation for clearing smoke gases.

Another source of ecologically harmful substances are smokehouses of sausage shop, working on firewood of compact breeds. Before the reconstruction the capacity of the sausage shop were not provided with such process equipment, which would allow to respect completely the ecological requirements.

At the end of the 90th the equipment of the German firm "Autoterm" which is one of the leading firms producing the meat-processing equipment, has received a wide circulation not only in the Western Europe , but also all over the world.

The secret of the heating chamber "Autoterm" is the special design of the smoke unit and receiving of technological smoke using a new technology. These heat chambers have allowed to introduce advanced industrial methods promoting the increase of flavor qualities and storage stability of meat products, conferring to sausages a pleasant appearance, providing high hygiene, simplifying production processes, reducing power and labor consumption.

If earlier for smoke house functioning a lot of firewood was necessary to burn for achieving concrete results of smoking under a time-limit, than nowadays the new technology needs a lot less of woodchip or sawdust. Whereas the process of semi coking is running under control, the new technology needs only 10% of the before used fuel, i.e. the economies of firewood constitute 90%, that has an important role in production costs decrease, especially in the woodless environment of Moldova .

Market demands promote constant improvement of production and ecological integrity of produced sausage production in order of its competitiveness on the internal and international level. Based on the 7-year lasting progressive cooperation of JSC "Carmez" with the Faculty of Ecological Chemistry and the Scientific Center of Applied and Ecological Chemistry of the State University of Moldova there were developed new processes. Among them the following:

1. Complex monitoring of sausage items and other meat products quality. Purpose: Using of modern research methods and development of means for prevention the formation probability of with cancerigenic, mutagenic and teratogenic properties at usage of nitrite additives. Advantages: Improvement of consumer qualities of sausage items; 30-50% increase of bacteriological stability; Increase of life terms of vendibility and flavor qualities of sausage items and 15-20 increase of storage terms.

2. The new production process of uncooked smoked sausages, such as "Saleami-Carmez". Purpose: Increasing the ecological integrity of sausage products. Increase of ecological integrity of a food due to preventing the formation of tarry and oil substances on the surface and in the interior of such sausages, that reduces the risk of formation of undesirable chemical components. The development is awarded Diploma of first degree at the International Exhibition of Inventions and New Technologies "INFOINVENT-2001."

3. New processes on improvement of ecological state of production.

3.1. Ecological audit of the state of water consumption, water removal and air emission systems. Purpose: Revealing the defects of the ecological state of production, the determination of the optimal ways of their removal, the search and the motivation of technical decisions on conformation to the International ecological requirements. The conducted ecological audit according to the technique of the European Community Commission has revealed the problems connected to the prevention of the environmental contamination and the solving with receiving economic profit from their realization. The construction of purification installations of storm water drain at the enterprise with a system of clear water conditioning according to experts' proposals has allowed to reduce to 40,0 thousands of m3/year the total water consumption from the urban water-supply at the expense of reusing clear water and to receive an economic profit from realization of offers.

3.2. Non-reagent process of manufacturing and using of coagulant with antibacterial properties (Patents of Moldova ¹ 342,642, 1522, 1232, 2074). Purpose: increase of depuration process effectiveness of residuary water at the meat-food plant and cost decrease by developing a method of receiving and usage of oxy-chlorine aluminum ( Î C À ) as a new type of coagulant, received from waste products. Advantages: Increase of residuary water treatment effectiveness to 1,5-2 times; 15% decrease of capital and working costs. The development was presented at the I International Exhibition of Inventions and New technologies in Geneva in 1999 and was awarded Diploma and Silver medal.

3.3. Destruction depuration of biologically difficultly degrading organic substances during the treatment of residuary water (Patents of Moldova ¹ 841 and 920). Purpose: development of non-reagent technologies and compact equipment for residuary water treatment by oxidizing destruction of toxic organic compounds. Advantages:

- to 15-20 times of ascending of speed and efficiency of residuary water treatment;

- complete destruction of toxic compounds with formation of harmless simple inorganic gaseous substances; - the compact equipment and high water processing speed. Stage: pilot installation. The development is awarded Diploma and Silver medal at the International Exhibition in Brussels "EURECA-2000".

In 2000 experts of Meat-food Plant took part in project “Pure Production”, organized by the Center of Pure Production and Energetic Effectiveness of Republic of Moldova.

Starting with May 2003 JSC “Carmez” is taking an active part in National program enterprise preparation to ecologic management.  Experts participate in seminars of training in International Standards ISO-14001, organized by the Center of Pure Production and Energetic Effectiveness of Republic of Moldova together with Norwegian Society of engineers in degree. ( Oslo , Norway ).
